Kushari is an Egyptian dish of rice, lentils & macaroni topped with tomato sauce and fried onion. Also optionally, with garlic sauce.

Kushari is a vegetarian dish that is very popular in Egypt. It is an inexpensive food served at roadside stalls and restaurants all over the country, some of which sell only kushari.

And I am not the chef of this dish, my sister-in-law is ;)




Ingredients :-

whole masoor 1 cup soaked for 3-4 hrs
rice                1 & 1/2 cup
pasta              200g boiled
tomatoes        6 
onions            3 sliced
garlic             4 cloves chopped
salt
pepper
red chilli powder
sugar

Method :-
salsa-
Grind 6 tomatoes with 1 onion.
heat 2 Tbsp of oil. add crushed garlic and pureed tomatoes, braze. 
add salt , sugar, red chilli powder and pepper as per taste. bring to a boil.

rice;
Cook rice in plenty of water with salt n oil till done. remove excess water. cook on low flame for 5 min with lid on.

masoor:
Pressure cook masoor with salt pepper and cumin powder.

Make birishta of 3 onions (deep fry sliced onions till brown n crisp).

In a bowl, take some pasta n thn rice.. press firmly and invert over d plate.place d masoor around d rice and top with salsa n birishta.

Double-Cheese Enchiladas

The Spanish pride themselves in Enchiladas. It is actually a corn tortilla rolled around a filling & covered with chili pepper sauce. But, if you do not have easy access to corn tortillas, you can use crepes also in their place. It tastes still yummy !!


For the crepes, you will need :

  • 3 eggs
  • 2 cups plain flour
  • half tsp salt
  • half cup + 2 tbsp milk
  • half cup + 2 tbsp water
  • 2 tbsp oil or water
Mix all the ingredients together with a hand beater or electric beater until well combined.
The mixture should be of a very smooth consistency & little thin so that it spreads smoothly over a hot pan.

For the filling, you will need :
  • 1 onion, chopped
  • 2 capsicums, chopped
  • half cup corns
  • 300 gm cottage cheese
  • 6 cloves garlic
  • 2 tbsp olive oil
  • salt
  • mixed herbs
  • red chili flakes
Add the olive oil in a pan. Once it is hot, add in the onions + crushed garlic. Saute till onions are transparent.
Then add in the capsicums + corns + crumbled cottage cheese. Fry for 2 mins. Then add the  mixed herbs + red chili flakes. Cook for another 2 mins.
Your filling is ready!

For the sauce, you can just simply grate tomatoes & add a lil salt + pepper + red chili flakes & you are good to go!

Now, make the crepes in a non stick pan, place the filling in the center  sprinkle some cheddar cheese, roll the crepes.

Arrange all the stuffed crepes in a baking dish neatly. Pour the tomato chili sauce over it & top it off with lots of grated cheese. Put in the oven till the cheese melts !

** You can also add other ingredients in your filling. Baked beans or mushrooms go well with this apart from non veg stuff !!
